About the product
Our wild organic pistachios grow in the Samarkand region of Uzbekistan. Small farmers collect the nuts by hand and carefully crack, dry and shell them. They are neither roasted nor salted - this preserves their natural, slightly sweet flavour. Ideal for anyone who wants to enjoy pistachios in their purest form.
Our organic pistachios come from old, aromatic varieties and impress with their delicate texture, pleasantly nutty-sweet aroma and intense green-purple colour. Unroasted and without salt, the natural character of the pistachio takes centre stage - ideal for connoisseurs who appreciate pure quality.
Pistachios are a valuable source of vegetable protein, fibre, healthy unsaturated fatty acids, B vitamins and minerals such as magnesium and potassium. As a nutritious snack, they support a balanced diet.
Pistachios are very versatile: As a pure snack, in muesli and bowls, for desserts or as an ingredient in oriental and Mediterranean cuisine. They are also ideal for baking and for delicious pistachio pesto.
The botanical origin of pistachios is thought to be in West and Central Asia. Our Uzbek wild pistachios are also descended from these original varieties. The wild collection areas in the mountainous regions around Samarkand and Tashkent are not artificially irrigated - the pistachio trees thrive exclusively with the naturally available rainwater and groundwater. This conserves the scarce water resources in Uzbekistan, where water is a rare commodity, and makes this product particularly environmentally friendly and sustainable.
Wild harvesting is controlled by the state; a fee is paid per kilogramme, which also ensures the protection of the areas. Due to the original growing conditions, the fruits are smaller than cultivated varieties, but are particularly flavoursome and rich in nutrients.
The harvest is carried out in autumn using painstaking manual labour. The collected pistachios are transported to central collection points on donkeys, horses or e-mopeds. The collectors belong to two Fairtrade cooperatives that support around 1,000 families along the old Silk Road and create fair jobs in structurally weak regions.
Further processing - from drying and sorting to peeling and packaging - is carried out by Silk Road Organik Foods in Uzbekistan. Energy-efficient processes are used, including solar thermal and photovoltaic systems, which enable largely climate-friendly processing. Up to 80 employees - mostly women - sort the pistachios by hand and check them for impurities and quality.
Our organic pistachios are produced from A to Z in Uzbekistan - directly in the country of origin of the raw material. Pakka deliberately favours direct trade without middlemen. In addition to paying the Fairtrade premium, the harvests of the small farmers are pre-financed. This strengthens the entire local value chain and ensures fair incomes, high-quality products and sustainable local economic growth.
